The almond tree is a tree with little need of water and roots that adapt to shallow soils. It begins its cycle with the appearance of flowers between the months of January and February, creating landscapes of great beauty. The ripening process of the fruit lasts until the end of August, at which time it is collected.

Almonds and raisins were the largest sources of agricultural wealth of the Marina Alta the 19th century when they were exported massively in northern Europe, the United States and the United Kingdom. In Alcalalí, an agricultural recovery plan is being implemented, with almonds as the main product. There are three varieties found in the Marina Alta: La Marcona, la Cabeza and la Rumbeta, the latter originally from Alcalalí.

In the kitchen, the culinary use of almonds is very varied. It is an essential element in traditional Marina desserts, such as cakes or all kinds of sweet Christmas cakes. It is a very common element in the preparation of sauces. Fried or roasted are a very common snack; they have also been incorporated into fish and meat stews. You can make flour and almond milk.
